I love preserving my garden for the winter!

I have an over abundance of red grape tomatoes this year. So many, that I finally decided to "sun" dry some  for use this winter. Unfortunately, the fall weather and rain made it impossible to use the sun...so I used my oven.


Begin by halving as many grape or cherry tomatoes as you wish to preserve. Set your oven for 200 degrees. Make sure you do this on a day when you don't need your oven for any other purpose!


 You can dry them as they are, or you can toss with olive oil and your favorites seasonings. I used olive oil, kosher salt and dried basil.


Place cut side up on a lined cookie sheet and place in the oven. They need to stay in there until they are dry...mine took 7 hours. This would also work great in a Food Dehydrator.


To store- place some in olive oil in the fridge...and more in a ziploc in the freezer. Great for pastas, chicken dishes or pizza all winter!
